If you make the quinoa stuffing ahead of time, it will only take 15-20 minutes to roast this high-fiber dinner in the oven. Simply cut the tops off of the tomatoes, carefully remove the seeds, stuff with quinoa, and then roast. Ripe tomatoes work best in this recipe, especially summer ones fresh from your garden.
