Katie is the author and founder of Chocolate Covered Katie, the popular food blog that has been featured on Dr. Oz, The Today Show, CNN, The Food Network, Bon Appétit, Cooking Light, and People Magazine. She has been vegan for over 14 years, and enjoys creating healthy, vegan dessert recipes.

When she was living in Texas years ago, Katie first tried NuGo bars. She loves vegan NuGo Slim Chocolate Mint and Espresso as well as NuGo Protein Cookies Dark Chocolate Chip. When asked what advice she has for someone new to a vegan lifestyle, Katie shared this valuable tip.

“The first advice I have for anyone who wants to incorporate more plant-based meals into their diet, whether it’s to go fully vegan or simply to eat less meat in general, is to not replace meat with vegan meat substitutes, which can just set you up for disappointment when you expect one thing and get another. Instead, think of it as a chance to explore new recipes and look at vegetables in a whole new light. When you start looking at vegetables as the main event instead of just a side dish or salad, it opens up a brand new realm of possibilities.”
